Rydbergs History – The Foundation of Our Heritage

Rydbergs’ history tells the story of how a grand 19th-century hotel shaped the city’s cultural and culinary landscape, and how this legacy lives on through Restaurant Rydbergs. By continuing to serve classic dishes like Biff Rydberg while introducing modern influences, each visit becomes a journey through Stockholm’s rich gastronomic traditions – where history meets the present.

1857 – Establishment of Hotel Rydberg

Hotel Rydberg opened at Gustav Adolfs torg in Stockholm, financed by the wealthy businessman Abraham Rydberg. The hotel quickly became one of the city’s most prestigious meeting places for intellectuals, artists, and writers.

Culinary Innovation – Biff Rydberg

One of Hotel Rydberg’s most significant contributions to Swedish cuisine was the creation of Biff Rydberg. Developed by the hotel’s chef Gustafsson, this dish consists of diced beef, fried potatoes, and onions, often served with a creamy mustard sauce and egg yolk. It quickly became a symbol of both the hotel’s and the city’s culinary advancements and remains a classic in Swedish gastronomy today.

1914 – The Hotel’s Closure

Despite its success, Hotel Rydberg was demolished in 1914 due to urban development in central Stockholm. Although the physical building disappeared, the hotel’s spirit and culinary heritage lived on in Restaurant Rydbergs.

Present Day – Restaurant Rydbergs

Restaurant Rydbergs, now located on Drottninggatan in Stockholm, has inherited the legacy of Hotel Rydberg. The restaurant serves as a living tribute to the elegance and culinary innovation of a bygone era. By preserving and renewing traditional dishes, with a particular focus on the iconic Biff Rydberg, we connect to our historical roots.
